Golden Turmeric Pancakes with Manuka Honey Candied Orange and Dark Chocolate
I'm fast becoming an expert at perfecting healthy pancakes, every Saturday morning. I've probably made hundreds now. These pancakes are gorgeously gold and oozing with healthy yummy-ness.
Turmeric is the spice of the minute due to it's huge array of health benefits, including it's ability to reduce inflammation in the body. Did you know that inflammation is the nasty culprit for all sorts of unsuspecting things, like depression! So consider this a ray of sunshine for your gut and mental health. Yay!!!!
Recipe:
Serves 3 adults or 2 adults + 2 small people.
For these I use my Amazing Light and Flour-free Protein Pancakes base recipe, but I add Turmeric and change the topping. Super simple. But if you don't like eggs and/or banana in this base recipe, then you could use my other Buckwheat Pancakes base recipe and exclude the cacao powder and stick to vanilla flavoured protein powder.
Ingredients for base pancake:
2 bananas
6 eggs
3 Tbps milled flaxseed
3 Tbps rolled oats ( optional but defo make for a better consistency )
1 tsp cinnamon
1 tsp nutmeg
1 Tbsp of turmeric
Coconut oil for the pan
Topping:
Plain yogurt
2 thinly sliced large juicy oranges
2 Tbps of Manuka Honey + more to drizzle
Cinnamon
Shaved or grated 90% good quality dark chocolate ( I used Lindt )
Throw all your pancake ingredients into a blender and blend for 30secs until smooth and the colour of gold. And set aside.
Add a heaped tsp of coconut oil to a pot or pan on a medium to low heat. Add the sliced oranges with the 2 Tips of Manuka Honey. Stir and let the oranges soak up the honey. Sprinkle a big pinch of cinnamon over the oranges, stir gently and let the orange simmer in it’s own juices for 5mins or so.
Heat your large frying pan on a medium to low heat with a tsp of coconut oil. Remember not to have the pan too hot, these pancakes are so light and cook quickly. I like making a stack of small pancakes so depending on the size of your pan and the size you like, pour 3 - 4 evenly sized pancakes into the pan. Cook for 2mins before flipping. Or keep an eye out for some bubbles on the surface. Be careful not to burn.
Stack each pancake onto of each other on to your plate. I like to add a heaped tbps of plain yogurt to each layer. Top the stack with a heap of hot honeyed oranges. Drizzle extra honey over your pancakes as desired. Shave or grate the dark chocolate over the stack. I like to stick a few whole pieces of chocolate in the top that eventually ooze and melt through the pancakes. Amazeballs.
