Chocolate Berry Buckwheat Protein Pancakes
Yes this is a mouth full, quite literally. This has become our Saturday morning family thang. Pancakes, but the healthy guilt free yet very tasty kind. Give me any excuse to put chocolate in something and I'll find a way. Research confirms high grade dark chocolate actually improves brain power. Woo hoo! Given I’m still suffering baby brain, I…. I’ve just forgotten what I was going to tell you. Anyway! You can also skip the chocolate and keep it vanilla. But I made my buckwheat pancakes this morning with a chocolate twist using chocolate protein powder, a couple of table spoons of raw cacao and shaved raw dark chocolate (99%). And with the frozen berries embedded in the fat pancake.. OMG. It works. This is plate licking good. These are fat bastard pancakes, so if you like yours thinner, just add more almond milk!
Recipe:
15mins. Makes 3 large pancakes or 6 smaller ones. But 1 pancake per person with toppings is a decent meal. My toddler eats a whole large one, but thats Charlie. He has hollow legs ( as my grand mother used to say about me ), god knows where the food goes!
1.5 cups of buckwheat flour
2 scoops of high grade protein powder chocolate flavour ( or vanilla if you prefer )
1.5tsp of baking powder
2 tbsp raw cacao powder ( optional, or exclude if you don’t like chocolate )
2 tbsp of ground flaxseed and chia mix
2 tbsp of coconut oil
2 cups of almond milk
2 cups of frozen mixed berries
Squeeze juice of 1 lemon
Mix all together, it will feel quite heavy, thick and full of frozen berry lumps. This is good! With a large serving spoon, spoon the mixture into greased hot frying. Cook on each side for only 1-2mins max on low to medium heat. Press the pancake down a little while in the pan to ensure the mixture is cooked all the way through. The berries will defrost in the cooking and become deliciously oozy and juicy. The pancake itself is thick, about a 1-2 cms! But the texture still light and full of flavour. Top the pancake with what ever you fancy, we went plain yogurt or coconut yogurt, fruit of the forest, banana, berries, maple syrup and sprinkle of raw cacao and cinnamon! Go nuts!
